When I say "food allergy", raise your hand if you picture someone eating a peanut or a strawberry and then being rushed to a hospital struggling to breath. Well, you'd be mostly right. A "true" food allergy causes the immune system to make huge amounts of histamine that leads to anaphylaxis. This isn't always life-threatening, sometimes it just causes hives, skin rashes or other reactions, but it all happens pretty quickly after exposure to the food. You don't have to remember this next part but just for the record, this type is called a type I hypersensitivity reaction, caused by the degranulation of mast cells or basophils that is mediated by Immunoglobulin E (IgE).
The mistake most people make is thinking "Hey, my face doesn't swell up like a beach ball when eat anything, so I don't have a problem with food". The fact is that only 5% of us actually have a "true" food allergy, but over 80% of us have food sensitivities or intolerances.
The immune system is a double edge sword. It protects us against bacteria, parasites, viruses and other potentially harmful invaders. Unfortunately for some, exposure to common foods, chemicals and molds can trigger chronic activation of the immune system. White blood cells release harmful chemicals and generate damaging free radicals when they encounter incompatible foods just as they do when fighting the bad guys. and that means inflammation.
Chronic activation of the immune system has been linked to migraine headaches, asthma, eczema, arthritis, chronic fatigue, digestive problems, IBS, obesity, infertility, hyperactivity, attention deficit disorder and premature aging.
Here's the BIG problem, symptoms can occur several hours or even days after exposure making it extremely difficult to pinpoint. This really is the main problem... if you ate a carrot and 30 minutes later you felt worse, it wouldn't take you long to make a connection. However, many people don't know it's even possible to have a sensitivity to carrots and might just think they ate a "bad" one. I mean who's ever heard of a carrot allergy?

If you're reading this, then there's a very good chance you've already had a different test, like IgG or RAST. Skin testing and the RAST test are not accurate for delayed type reactions and they measure only a single mechanism, such as the effect of mast cell release of histamine or the presence of allergen specific IgE molecules. Just remember IgE reactions happen pretty fast and we're looking for those hard to find delayed ones.
IgG tests look at just one immune pathway and can give you a false positive, since it can indicate exposure, not necessarily intolerance.
The Alcat Test has been used for over 20 years and is clinically proven to accurately and reproducibly measure leukocyte cellular reactivity in the whole blood. You might be wondering why a nutritional supplement company is selling a sensitivity test. We get asked that a lot. Craig (co-owner) and I both have kids that were having problems, Jake and TJ respectively. I won't go into detail, but let's just say they were both seen and tested more than once (including skin testing and IgG). Our own research led us to the Alcat Test, and also to the fact that it was only offered at Alcat's website for list price, or thru a doctor's office (usually above list price). The test helped both kids immediately; Jake had food issues, and we found out TJ was sensitive to several molds, which wasn't even on the radar for us at the time. What happens after I order the test?
After the order is placed, you don't have much to do. Your main job will be to schedule a time and place for the blood draw, but Alcat will call and help you with that. Here is a rundown of the process:

Do I just remove the "bad" food from my diet?
You could do that and it would help, but that's not the best way to go. This is another way Alcat really shines. They have created a rotational diet and yours will be customized based on you results. The rotational diet will give you a list of acceptable foods to eat on each of four days. This approach takes out the guesswork and prevents you from just replacing one thing you eat everyday with another. The nutritionist will walk you through your rotational diet and answer any question you might have. More reasons for using a rotational diet:
How quickly will I notice a difference?
Everyone is different, some feel better right away and some actually feel worse for awhile. The main goal for the first eight weeks of the rotational diet is to achieve detoxification and healing of the body. It is possible that for the first few days you may not feel well. You may feel as though you are going through withdrawals. Symptoms may include a dull headache, joint pain, and sinus discomfort or even back pain. Some doctors speculate that this is due to temporary excess of antibodies while antigens are being withdrawn, thus creating something resembling "serum sickness" or the body's tissues are dumping toxins which temporarily induce lethargy, aches, etc.
These withdrawal symptoms may start as little as 2 hours after stopping the foods (particularly coffee or tea) but will rarely last longer than 4 to 5 days. In extreme cases they can last up to 7 to 10 days. If any (or all) of these symptoms affect you, Alcat recommends that you increase your fluid intake.
May I eat something on rotation I was not tested for?
If you were not tested for a particular food(s), there is no way to know whether or not you will react if you eat them. If you did test positive (especially orange or red) to one or more foods in a family, there is a greater likelihood of you testing positive to other foods in the same family. If you want to add a food that you weren't tested for, you may want to omit this particular food, and all sources of it, for four or five days and then try it on the morning of the fifth or sixth day.
How long do I stop eating these foods and when do I re-challenge and in what order?
It is believed that once an "offender" food is removed from the diet, the body becomes hypersensitive to that food for about 8 weeks. For example, let's say you are red or orange sensitive to carrots and omit them. However, after 2 weeks if you happen to eat carrots... you may have an exaggerated set of symptoms that were never present when you ate carrots in the past. After the eight weeks, this hypersensitivity is thought to decline. Therefore, a 3 to 6 month period of elimination is most often recommended
On the other hand, if you have a yellow sensitive food that you chose to omit initially, and want to see if you can reintroduce it, three weeks is typically long enough to stay off.
Caution: the reaction can be dramatic. They strongly suggest you discuss the re-challenge procedure with your health care practitioner.
Having a chronic cough for over 3 years and going through many tests for my heart, hiatal hernia, acid reflux, and sinus problems, I was diagnosed with asthma and put on the usual medication. After being on asthma medication for 9 months, I ended up in the emergency room two consecutive days where they packed my nose to stop the bleeding
I had the ALCAT blood test in December 2008 and since January 9, 2009, I have followed the four-day rotation diet. In two days, after being on the diet, I stopped coughing 75-80% and in three days stopped taking my medication for the hiatial hernia an acid reflux. I no longer have heart burn

I can't say enough about how I feel now and will continue to stay on the rotation diet. I do not think of this as a diet. There is so much food to choose from daily. You are not hungry and it's your choice to choose what you want each day.

At 220 pounds I had been diagnosed with Osteoarthritis, Adult Onset Asthma, and High Blood Pressure. I was Border Line Diabetic and had Pitted Edema in my legs to the extent I wore support hose for 5 years. My ailments were only out numbered by the medications I took for them. I started trying to lose weight. Without much support or direction, I tried several nationally advertised well known diet plans. I would lose a little and gain even more. After approximately 3 years of this yo-yo I had gained an additional 32 pounds, and was now at my top weight of 252 pounds. Then I found the ALCAT Test through a book I was reading. I am a 65 year old female. With 35 years working in the health care system as a Physical Therapist and teacher, I had always been very active and healthy. About two years ago I started to get signs that something was wrong. The first thing I noticed was mucus in my throat at night, it began to wake me up and I'd be prowling the house at two in the morning. Gradually more symptoms came, I had rashes on my hands and arms, my head felt 'spacy' i.e. mildly drunk, I needed to sleep in the afternoon and felt exhausted, there were joint aches, stomach discomfort, bloating and gas. My doctor did tests and nothing was found. I'm not very good at accepting that there isn't a logical answer so I decided to figure it out myself.
I then found a book on food sensitivities. ALCAT was mentioned in the book and I decided to call directly. I live in Canada and ALCAT is in Florida but the process sounded quite easy. The test kit was sent to me and I had a local pharmacy take the blood, it then went back to Florida by overnight FEDEX. A telephone interview was arranged to discuss the results and the rotation diet. I have to say I was shocked by some of the foods I must avoid. Yeast was there, both brewers and bakers yeast, which I had suspected but so were many of my favorite foods.
Gradually I will be able to integrate many of the foods back into my diet as my immune system recovers, but the few in the severe sensitivity range will be avoided on a permanent basis.

Our son was diagnosed with Autism Spectrum Disorder at the age of 4 1/2 years old. However, the behaviors of the disorder were evident much earlier. Up to that time our son was delayed in talking, being potty trained, displaying many of the repetitive Autistic behaviors, and he had tantrums almost daily for up to an hour at a time. We had been told that many Autistic individuals are also allergic to cow's milk, wheat, gluten, dyes, etc. Though very skeptical that foods could be escalating his Autism, we reluctantly decided to try having the Alcat Test done on him. Upon receiving the results of the Alcat Test, we were initially overwhelmed at the list of reactions to foods, and additives of our son. But we decided we would follow it through, and so we did. We read labels, went to a health food store, whatever needed in order to find alternative foods for him to eat. Through the process of the diet change, absolutely amazing to us was the change in behavior. Our little boy went from his occasional kicking, biting, and daily tantrums, to no tantrums. Though the process of reduced behavior took almost 6-8 weeks, we saw almost immediate change in behavior within the first couple of weeks. We also saw improvement in his alertness and able to stay on task and focus better.
Our son is now 13 years old, is a high functioning Autistic-Asperger individual. He attends a public school and is mainstreamed for some classes, and is in the Special Resource class for others. Much of his class curriculum is modified. We attribute the wonderful progress we have seen in our son through the years with early intervention (a key ingredient). But we also certainly credit the Alcat Test and change in his diet with the dramatic difference we have seen in our son's behavior and alertness. For our son, it was an absolute God-send.

I wish I'd had the ALCAT Test done years ago and saved myself all the grief. I knew of 6 foods that bothered me, but knew there were others--but which ones?
